Corn Salsa - A Product Review

I hope you had a wonderful Thanksgiving.

Today I stopped by my favorite store, Trader Joe's to do the usual shopping and came across an item I had not seen before, Corn and Chile Tomato-Less Salsa. Now it could be that this item has been around for a while. I'ver just never seen it.

They describe it as a sweet combination of corn, red peppers, onion and a touch of heat. I bought a jar because that sounded good to me.

Well guess what? I can't stop eating it. I'm munching on it right now as I write this. The jar is 3/4 gone and won't last till tomorrow. I guarantee it.

In fact I'm having hambergers tonight and I'm planning to save some to put on top of the meat.

It's pretty sweet and there is plenty of heat.

I always read labels nowadays so let me give you a rundown.



Pretty much healthy stuff. No I have no vested interest in Trader Joe's. I just like their stuff. And this salsa is well worth trying. Use it as a dip with corn chips, or in tacos or burritos.

I'm heading back to TJ's for more of this salsa.

P.S. Trader Joe's is carrying their enchilada sauce again. Don't forget to check that out. It's one of the best enchilada sauces on store shelves.

Delicious Pumpkin Bread Recipe


Last week I went over to visit my mom to paint her kitchen with my sister. Well sis decided to surprise us each with a loaf of homemade pumpkin bread.

Boy was it good. Mom opened her loaf first and it was eatened within the hour. It was absolutely excellent. The pumpkin bread is nice and moist and full of flavor. It freezes well too so you can make up a few loaves ahead of time and have them ready to give away later.

So for the next week I had a cup of green tea with a slice of pumpkin bread for breakfast.

Now that I'm all out, I will have to whip up a batch of the pumpkin bread recipe. Give it a try. I know you are going to love it.

Enchiladas con Huevos



Combine first four ingredients with enough enchillada sauce to moisten. Roll into tortillas. Top with remaining sauce. Sprinkle with 1/2c of jack cheese. Bake at 350F for 20 - 30 mins. until hot through. Yum

Tempting Tortilla Soup Recipe

The other day I was in the mood for some nice warm chicken soup and thought "You know? I've never had tortilla soup." I think I will make one up. I checked a few recipes and put one together with ingredients I thought would go great together.

You know what? I think it turned out pretty good. How can you go wrong with a base of sauteed onion, garlic, tomatoes, chicken and tortillas? I added some fresh corn which gives it a nice crunch.

I even managed to make this a quick easy recipe by buying a rotisserie chichen and adding that.

I did cook up my own tortilla strips but you could even by pass that step and throw in some Trader Joe's Organic tortilla chips. In case you haven't noticed, I really like Trader Joe's. They have great prices on a lot good items.

I made my tortilla soup recipe in about 1/2 hour and best of all it's really tasty. Add some homemade cornbread and you're in for a great meal.

Garlic Mashed Potato Recipe

The other night I decided to make mashed potatoes for dinner to accompany my fried fish. I wanted this recipe to be really easy and quick and of course taste good.

My hubby doesn't like sour cream or so he thinks but I really wanted to make this dish with sour cream in it. What to do. Well I decided to make the potatoes with a little sour cream. Maybe he wouldn't notice.

Guess what? He didn't notice and I put a couple of big spoonfuls in the potatoes. In fact he really liked them a lot. He didn't ask about sour cream or what was in them and I didn't offer. He doesn't know about this blog yet so maybe he won't find out!:)

Garlic Mashed Potatoe Recipe




Start with cooking the bacon first so it will be done when the potatoes are. Drain bacon on paper towels and then chop into small pieces.

Wash and cut up the potatoes into chunks. Leave the skin on. This saves time and is more nutritious. Put potatoes and garlic cloves in a pot and fill with water. Boil the potatoes till done about 15 minutes.

Drain the potatoes in a colander and then put the potatoes and garlic back in the same pot. Add the sour cream, butter, salt and pepper and smash with a potato masher. When the potatoes have a nice smooth fluffy consistency, mix in the bacon and parsley.

Believe it or not all that garlic doesn't overpower the potatoes. It also gets real nice and soft so when you mash the potatoes, the garlic sort of disappears except for that great flavor. And if you don't want to add the bacon, don't. The potatoes will still taste great.

Most of the time when you think of making homemade mashed potatoes it seems like an ordeal. You've got to peel all these potatoes, cook them, then bring out the mixer, etc. etc.

So try this recipe. You only dirty one pot, there's no peeling invovled and they mash up real quick with a hand masher. You can even leave them a little chunky if that is your desire.
