Pork Enchilada Recipe

I've added another new recipe to my site. You guessed it, a pork enchilada recipe. This one is quick to make and tasty. I was inspired by my friend Mark Nichols who recently surprised me with a tray of Verde enchiladas. He was returning the favor of me always bringing him quarts of homemade hot sauce. Mark's addicted to the stuff and if I ever bottle it, he'd be first in line to buy it. But that's another story.

So what I've created is roast pork enchiladas with Verde enchilada sauce. This time I used Trader Joe's Verde Salsa. If you've ever tried it, you know it's good stuff. I like my enchilada sauce to have a smooth consistency so I pureed it in a blender. Then I added some sour cream.

For the pork, I share with you how I cook a pork roast with garlic and wine and actually create two meals out of one, pork enchiladas and pork roast with roasted potatoes. Both are very delicious meals and very different.

Want your enchiladas, no matter what kind you are making, to taste their best? It does not matter whether they are cheese, chicken or beef. Heat some canola oil in a small frying pan over medium heat. When the oil is hot, dip in one or two corn tortillas at a time into the oil to soften them. Drain and then dip them in the sauce or ladle some of the sauce on top and spread it around. This will give you the best tasting enchiladas.

Mexican Wedding Cookies


Mexican wedding cookies are traditionally given as wedding favors wrapped in white fancy paper.

This favorite holiday cookie also goes by many different names. Some call them snowballs, Russian teacakes, or Swedish teacakes. The names may be different but the cookie is basically the same.

Mexican wedding cookies can also vary by the type of nuts that are used. I use pecans, but walnuts and almonds can be substituted.

This recipe is fairly easy to make and a great one for kids to try with your supervision. They will have a ball rolling them in the powdered sugar and then popping them in their mouths.:)

So don't wait for a wedding to try these easy to make cookies. Try them during the next holiday season for a festive treat. They make a great Christmas cookie.

Mexican Wedding Cookies



* 1 cube butter, softened
* 1/4 cup powdered sugar
* 1 tsp. vanilla extract
* 1/2 tsp. almond extract
* 1 cup sifted flour
* 1 cup raw pecans, toasted,

Toasting the pecans will add a nice rich flavor to these cookies so I highly recommend you do this step.

Preheat oven to 350 degrees. Place the pecans on a cookie sheet in a single layer and bakefor 6 - 8 minutes or until they are lightly browned and fragrant. Allow them to cool.

In a medium size bowl cream the butter, vanilla and almond extracts together with an electric mixer. Add the powdered sugar until mixed in.

Add the flour a little at a time until it is fully blended in.

When the pecans are cool, place them in food processor or chop with a knife until they are fairly fine.

Stir in the pecans.

Chill dough in the refrigerator for 15 minutes and then shape 1 inch balls with yourfingers and place on an un greased cookie sheet 1 to 2 inches apart.

Bake in a preheated 350 degree oven for 12 - 15 minutes or until lightly golden brown on the bottom. Cool on a wire rack. Roll the cookies in powdered sugar while they are still warm. When completely cooled store in an airtight container.

Remember, mexican wedding cookies are a delicious dessert anytime of year.

Super Easy Apple Crisp

I am posting another apple crisp recipe for a couple of reasons. One is this one is incredibly easy and extremely tasty. My aunt made it two days ago to take to work. Everyone loved it so much my aunt felt guilty and had to confess the recipe actually came from me.

Second, my son actually prefers this recipe to my other one so I thought I would include it.

I got this recipe from a friend so I really don't know where it came from. It might even be a Pampered chef recipe. If anyone knows for sure, let me know by leaving a comment and I will give appropriate credit.

You will love this apple crisp recipe. I always recommend pippin apples but my aunt used gala and everyone loved it. So use your best judgment.

My other apple crisp recipe is pretty easy too. I prefer it to this one only because the ingredients are a little more healthy.

Instead of using a cake mix my other recipe calls for oatmeal and flour.

Try both and do a taste test. If you do, I'd love to know which one you prefer.

Super Easy Apple Crisp


Ingredients

Directions:

Place the thinly sliced apples in a 9 x 13 oven proof dish. Layer them evenly in the dish.

In a separate bowl add the rest of the ingredients and mix with a fork until mixture is crumbly.

Spread the cake mixture evenly over the top of the apples. Bake in a 350 degree oven for 35 to 40 minutes.

This apple crisp recipe is fabulous served with a scoop of vanilla ice cream. Yummy.:)
